How to make this broccoli orzo with cheddar
Sauté garlic. In a large saucepan over medium heat olive oil. Sauté the garlic with the olive oil until the garlic becomes aromatic, or about 30 seconds to 1 minute.
Cook the orzo and broccoli. Add water, salt and orzo to the garlic and bring to a boil. After about 5 minutes of boiling, add the broccoli. You are not going to drain the orzo after cooking it, leaving a slight bit of pasta water will make this dish extra creamy.
Stir in the cheddar. When the broccoli and orzo are tender, stir in cheddar cheese. Continue to stir until cheese has melted and the orzo and broccoli are well coated in sauce.

Ingredients
- 1 tablespoons olive oil
- 2 garlic cloves, minced
- 2 1/2 cups broccoli florets (1 large head of broccoli)
- 1 1/2 cup orzo
- 3 cups water
- ½ teaspoon coarse salt
- 1 cup shredded cheddar cheese
- Optional: 1 teaspoon turmeric
- Salt & pepper, to taste
Instructions
- Heat olive oil in a large saucepan. Add garlic and sauté until garlic is aromatic.
- Stir in water, salt and orzo, and bring to a boil.
- After about 5 minutes add broccoli and continure to cook for about 5 more minutes, stirring occasionally.
- When broccoli is tender and most of the liquids have been absorbed. It is okay if there is a bit of liquid left, this will help create the sauce.
- Stir in the cheese and turmeric until everything is well coated in sauce.
