We’ve crafted our very own version of the slightly sweet and savory dish – Pasta Fresca from Noodles & Company. This copycat recipe brings together the beloved fresh flavors of juicy tomatoes, vibrant spinach with tender penne pasta sautéd in a light white wine sauce.

Ingredients

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tomatoes
  • ½ red onion
  • 2 cups fresh spinach leaves
  • 2 tablespoons white wine
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon coarse salt
  • Shredded or shaved parmesan cheese, for garnish

Instructions

  1. Cook the pasta according to package directions, to al denté. Reserve ½ cup of pasta water, drain  and set aside.
  2. Heat olive oil in the same pot. When the oil is hot add garlic and onion, cooking until onions have become tender. 
  3. Stir in balsamic vinegar, white wine and tomatoes. Cook, stirring occasionally until tomatoes have softened. 
  4. Return the pasta to the pot and stir to combine.
  5. Add spinach, parsley and salt, again stirring to help the spinach to wilt.
  6. Stir fry for 2-3 minutes over medium heat.
  7. Garnish with shredded parmesan and serve.
