Description

Tikka masala pasta is a unique, spiced pasta dish made with a creamy tomato sauce seasoned with traditional masala spices. This curried pasta is infused with warm, fragrant spices in a slightly sweet and tangy sauce. 


Ingredients

Scale
  • 1 pound spiral pasta

  • 2 tablespoons olive oil, divided

  • 1/2 cup diced onion

  • 2 garlic cloves, minced

  • 2 teaspoons grated ginger

  • 1 cup crushed tomatoes

  • 2 teaspoons garam masala

  • 1/2 teaspoon paprika

  • 1/4 teaspoon fenugreek

  • 1/4 teaspoon chili powder*

  • 1/4 teaspoon cumin

  • 1/2 cup half and half

  • Salt to taste


Instructions

  1. Cook pasta to al denté. Drain and set aside, reserving ½ cup of pasta water for the sauce.
  2. Heat olive oil in a skillet on medium high heat.
  3. Sauté onion, garlic and ginger until fragrant.
  4. Add tomatoes, spices. Stirring to incorporate.
  5. Whisk in heavy cream. Add 2-3 tablespoons of pasta water. Whisk again.
  6. Add pasta to skillet, stirring until well coated.

Notes

*For a spicier version substitute 1 teaspoon cayenne pepper
