2 tablespoon olive oil 1 smoked sausage link (about 14 ounces, sliced) 1 medium onion (chopped) 1 garlic clove (minced) 1 14.5- ounce can petite diced tomatoes with green chilies 4 cups chicken broth 2 ounces cream cheese (or neufchâtel cheese) 1 16- ounce package medium pasta such as farfalle or shells (uncooked) 1 teaspoon coarse salt 8 ounces fresh spinach leaves 1 cup shredded cheddar cheese For topping:
Shredded cheddar cheese 3 - 4 green onions (sliced)
In a large skillet, sauté the onion and garlic in the olive oil over medium heat.
Add sliced sausage continue cooking to brown the sausage, stirring frequently, until onions are tender - about 5 minutes.
Add tomatoes with green chilies, chicken broth, uncooked pasta, coarse salt and cream cheese.
Increase heat to high and cover skillet.
Bring to a boil and continue cooking until pasta is tender, about 20 minutes - stirring occasionally.
Stir in shredded cheese, adding an additional ½ cup of water if needed.
When pasta is fully cooked, stir in spinach leaves and continue to cook until wilted.
To serve, top with shredded cheddar cheese and green onions.
