Cheesy Broccoli Orzo

Ingredients

  • 1 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 2 1/2 cups broccoli florets (1 large head of broccoli)
  • 1 1/2 cup orzo
  • 3 cups water
  • ½ teaspoon coarse salt
  • 1 cup shredded cheddar cheese
  • Optional: 1 teaspoon turmeric
  • Salt & pepper (to taste)

Instructions

  • Heat olive oil in a large saucepan. Add garlic and sauté until garlic is aromatic.
  • Stir in water, salt and orzo, and bring to a boil.
  • After about 5 minutes add broccoli and continure to cook for about 5 more minutes, stirring occasionally.
  • When broccoli is tender and most of the liquids have been absorbed. It is okay if there is a bit of liquid left, this will help create the sauce.
  • Stir in the cheese and turmeric until everything is well coated in sauce.
