1 tablespoons olive oil 2 garlic cloves (minced) 2 1/2 cups broccoli florets (1 large head of broccoli) 1 1/2 cup orzo 3 cups water ½ teaspoon coarse salt 1 cup shredded cheddar cheese Optional: 1 teaspoon turmeric Salt & pepper (to taste)
Heat olive oil in a large saucepan. Add garlic and sauté until garlic is aromatic.
Stir in water, salt and orzo, and bring to a boil.
After about 5 minutes add broccoli and continure to cook for about 5 more minutes, stirring occasionally.
When broccoli is tender and most of the liquids have been absorbed. It is okay if there is a bit of liquid left, this will help create the sauce.
Stir in the cheese and turmeric until everything is well coated in sauce.
