Creamy Smoked Salmon Pasta

Creamy smoked salmon pasta is made with delicate smoked salmon in a refreshing and creamy dill sauce, studded with tangy capers and mellow artichokes hearts. This elegant and vibrant pasta dish only takes one pot to prepare and can be ready in 15 minutes.

Ingredients

  • 16 ounces farfalle pasta
  • 8 ounces smoked salmon (chopped into bite sized pieces)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 ¼ cup half and half
  • ¼ cup white wine
  • 1 tablespoon fresh dill (chopped and divided)
  • 2 tablespoons capers
  • 1 14- ounce can artichokes hearts (drained)

Instructions

  • Cook pasta according to package directions, to al dente. Reserve 1/2 cup of pasta water, drain and set aside.
  • In the same pan, melt the butter over medium heat. Add minced garlic and sauté until fragrant.
  • Reduce heat and whisk in half and half and white wine. Simmer for a few minutes until heated through and sauce has thickened.
  • Stir in capers, artichokes hearts and 1 -2 teaspoon fresh dill. Continue cooking until the sauce thickens slightly. Season with salt and black pepper to taste.
  • Return pasta to the pot and stir in smoked salmon, until everything is coated well with sauce.
  • Serve with additional chopped dill and lemon wedges for garnish.
